Autumn Fig Salad

 

The good folk at Forage & Gold Honey down in Central Otago feasted on a box of our fresh Adriatic figs this season. With it, they created many delicious things including this Autumn fig salad. Here’s how you can recreate it at home…

The salad was super simple, a few generous handfuls of rocket, plenty of juicy figs sliced on top, a handful of thyme-honey caramelized walnuts, crumbled goat cheese and a honey balsamic dressing.

 

Thyme-honey caramelized walnuts for one medium salad:

In a small fry pan melt together 1 tbsp of butter with 1 tbsp of Thyme honey on med-low heat. Add a big handful of chopped walnuts, a generous grind of black pepper and 1/4 tsp salt and stir together while bubbling for a few minutes until thick and caramelized. Cool on a piece of baking paper and add to salad.

 

Honey balsamic dressing:

This is a sweet and tangy dressing that pairs perfectly with salads containing fruit.

1/4 cup olive oil

2 tbsp balsamic vinegar

1, 1/2 tbsp of Vipers bugloss honey

Salt and pepper to taste

Add ingredients to an empty Forage & Gold honey jar, put the lid on and shake well.  Drizzle over salad.
